1, 7= Blue. I suppose it is my Christian background; Seven is a divine number and closely associated with God, symbolizing peace, serenity and well-being as does blue.
2, Friday=Red. Most people I know have their major fun on Friday. Friday night means partying like a rockstar and taking no prisoners; practically burning with passion and zeal, symbolized by red.
3, E=Yellow. I have no idea why... Both things seem bland and sickly to me...I'm clueless.

I like your question and it is one I often ask myself but in a slightly different form. I wonder why I associate certain people with particular colours or certain ideas with specific people. I always found that I ended up rationalizing too much that I couldn't come up with a concrete reason. I decided a while back that it was just a part of our unconscious mind that handled it hence my failed attempts to resolve the riddle. I believe it is always good to revisit problems hence my renewed resolve to find an answer.
My new approach to solving the problem would be to study the etymology of the words and try to remember within what context I came to know them. Daunting, I know, but "Nothing worth gaining was ever gained without effort." -Theodore Roosevelt
